Ham Glaze Recipes

Your Pork Shop Ham is fully cooked. To heat your Pork Shop ham place it in the oven at 325 for 10-15 minutes per pound.  Basting should be done in the last hour of cooking.

To baste your ham, remove it from the oven and score diagonal shallow cuts across the top. Apply a generous amount of glaze and place back in the oven for one hour basting every 10-15 minutes depending on how strong you want the basting flavor.

Allow the ham to rest covered for at least 10 minutes to allow the juices and heat to distribute evenly.

 

 Apricot Glaze

1 cup Honey Dijon Mustard

1 cup Apricot Preserves

Mix together in a small pot over low heat.  Use half for the baste and reserve the other half for the table.

 

 Guiness Braised Half Ham

1/2 cup Brown Sugar

1 Can of Guiness Beer

Over medium heat simmer the sugar and beer until the liquid is reduced by one third.  The alcohol will cook out of the mixture.  double recipe for a whole ham.

Bake ham for 15-20 minutes per pound.

 

 Brown Sugar Glaze

3/4 cup Brown Sugar

2 tablespoons Dry Mustard

Stir in just enough orange juice until spreading consistency.

 

 Cranberry Glaze

3/4 cup Jellied Cranberry Sauce

1/3 cup packed Brown Sugar

Stir in just enough lemon juice until spreading consistency.

 

 Mustard Glaze

1/2 cup packed Brown Sugar

1/4 cup Yellow Mustard

Honey or light Molasses

Stir in just enough honey or molasses until spreading consistency.

 

 Stuffed Pork Loin

1. Start & prepare your gas or charcoal grill for indirect cooking and heat to 400 degrees.

2. With no fire below the loin cook  bacon side up for 60-90 minutes. Check the meat temp after 30-40 minutes to avoid over cooking

3. You may need to rotate the loin 180 degrees for more even browning.

4. With a meat thermometer in the center stuffing the temp should read 150-160 degrees.

5. Remove from grill, cover with foil and let rest for 15 minutes.

NOTE: Cooking times will very based on the size of  your stuffed loin.

 Smoked Turkey

Preheat your oven to 325°F. Place the cold (not room-temperature) turkey in a roasting pan, breast-side down. This allows the fat from underneath the bird to drip down while it heats up, ensuring a moist, tender breast. Cover the turkey with foil and place in oven. You’ll want to reheat your turkey for around 5 to 10 minutes per pound. A 10 - 15lb turkey would need to reheat for around 50 to 90 minutes. Use a meat thermometer before removing. Your Pork Shop turkey is fully cooked, which is why we recommend an internal temperature of 145°F.

 

Answers to common questions

we get regarding our turkeys.

 

1. They are fully cooked.

2. Our turkeys are brined and will have a different consistency than an oven roasted turkey.

3. Turkeys will have a light smoke flavor from the cooking process.

4. They will have areas that look pink.  this is from the brine and smoking process.  see line one.

5. When reheating, it only needs an internal temperature of 145 degrees.
